What we did was dice both peppers and the tomatoes. We cut the celery in a Half Moon cut and the scallions we just did a Rondelle cut. We then tossed them in with the spinach and we made a salad.We marinated the chicken in lemon juice, freshly squeezed Orange Juice, we added a bit of garlic and onions to add a bit of flavor to the chicken. After we let it sit for a couple of minutes we grilled the chicken for about 5 minutes on each side or until it wasn't pink. We chose to use rice as our starch and we made white rice. We added a bit of chicken stock so it could add more flavor to it. At last we only had the cauliflower and scallions left to incorporate into the dish. We decided to blanch and add mozzarella cheese to the cauliflower, we decided to use the scallions as a garnish for the chicken. Something didn't feel right about the salad so we made a quick dressing and added that to the salad, which at the end helped improve the plate. Below are 2 pictures it took of our final product.
